LOCATION
Seasoned and salt-cured but not smoked, Italian prosciutto is pressed as it air-dries. The resulting ham is firm and dense with silky rich texture and flavor. Prosciutto toughens as it cooks; take care to only briefly heat it.
Sliced or chopped ham can be used in place of the prosciutto.
