Powerful Peanut Butter Sandwiches

Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup shredded carrot
  • 2 tablespoons shelled sunflower seeds
  • 2 tablespoons raisins
  • 2 tablespoons honey
  • 4 bagels, split, or 8 slices whole wheat bread

    In small container, combine all ingredients except bagels; mix well. Spread mixture on 4 bagel halves or bread slices; top with remaining bagel halves or bread slices.

  • Packaged pre-shredded carrots make these sandwiches even easier to prepare. Use the remaining carrots in salads or soups.
  • The sweet peanut butter, fruit and nut filling is not just for lunch. Try spreading the filling on toast for an energy-filled breakfast, or fill celery sticks for a quick pick-me-up snack.
