lb extra-lean (at least 90%) ground beef

tablespoons Progresso® plain bread crumbs

tablespoons steak sauce

Filling

cups water
1/2
cup milk

tablespoons butter or margarine

teaspoon salt

cups instant mashed potatoes (dry)

egg
1 1/2
cups Green Giant® Valley Fresh Steamers™ frozen chopped broccoli, thawed
1/2
cup shredded sharp Cheddar cheese (2 oz)

  • 1 Heat oven to 350°F. Spray 8-inch square (2-quart) baking dish with cooking spray. In medium bowl, mix first 7 ingredients. Press in bottom and up sides of baking dish to within 1/2 inch of top.
  • 2 In 2-quart saucepan, heat water, milk, butter and 1/4 teaspoon salt to boiling. Remove from heat; stir in potatoes. Let stand 30 seconds. Stir in egg. Stir in broccoli and cheese. Spoon over meat shell.
  • 3 Bake 25 to 30 minutes or until meat loaf is thoroughly cooked and meat thermometer inserted in center of meat reads 170°F. Let stand 5 minutes; drain liquid along edges.

The recipe didn't say to brown the ground beef so I didn't. It took forever to cook. Been waiting about 45mins and the ground beef is still pink inside. If I do make this again I will be browning the ground beef first. If I was supposed to to begin with the recipe should've said it!

This was easy and very tasty. It kind of reminded us of a Shepard's Pie. I used cheddar cheese potatoes, so I omitted the cheese in the recipe. I also left out the broccoli because I didn't have any on hand, but I bet it would be good!
