Ingredients

cups shredded peeled potatoes, drained on paper towels

cup shredded carrots

cup finely chopped onion

tablespoon chopped fresh chives

tablespoons all-purpose flour

eggs, beaten

teaspoon salt

teaspoon pepper

Directions

  1. 1 Heat 1/4 inch oil in heavy skillet over medium-high heat. Meanwhile, in medium bowl, combine potatoes and remaining ingredients; mix well.
  2. 2 Using about 1/3 cup mixture for each, form 9 patties 3 to 4 inches in diameter. Cook 2 to 3 minutes on each side or until lightly browned. Drain on paper towels. Serve immediately.
