Potato Latkes

This traditional Hanukkah dish of crisp potato pancakes is often served with applesauce or sour cream.

Ingredients

Oil

cups shredded peeled potatoes, drained on paper towels

cup shredded carrots
1/2
cup finely chopped onion

tablespoon chopped fresh chives

tablespoons all-purpose flour

eggs, beaten

teaspoon salt

teaspoon pepper
  • 1 Heat 1/4 inch oil in heavy skillet over medium-high heat. Meanwhile, in medium bowl, combine potatoes and remaining ingredients; mix well.
  • 2 Using about 1/3 cup mixture for each, form 9 patties 3 to 4 inches in diameter. Cook 2 to 3 minutes on each side or until lightly browned. Drain on paper towels. Serve immediately.
