cup finely chopped onion

  • 1 Heat 1/4 inch oil in heavy skillet over medium-high heat. Meanwhile, in medium bowl, combine potatoes and remaining ingredients; mix well.
  • 2 Using about 1/3 cup mixture for each, form 9 patties 3 to 4 inches in diameter. Cook 2 to 3 minutes on each side or until lightly browned. Drain on paper towels. Serve immediately.

If potatoes are shredded ahead of time, place in bowl and cover with cold water. When ready to use, drain and squeeze dry with paper towels.
