Pork with Sweet-Spiced Caribbean Rub

Ingredients

tablespoon packed dark brown sugar

teaspoon ground ginger

teaspoons ground allspice

teaspoon ground cinnamon

teaspoon dried thyme leaves

teaspoon ground red pepper (cayenne)

teaspoon ground cloves

boneless pork loin chops, 1/2 inch thick (about 3/4 lb)

teaspoons olive or canola oil

Directions

  1. 1 Heat gas or charcoal grill. In small bowl, mix all ingredients except pork chops and oil until well blended. Place pork on large plate; spoon 1/4 teaspoon oil on each side of pork. Sprinkle about 1 teaspoon spice mixture over each side. With fingers, rub into pork.
  2. 2 When grill is heated, place pork on gas grill over medium-high heat or on charcoal grill over medium-high coals. Cook uncovered 8 to 10 minutes, turning once, until pork is browned and slightly pink in center.
