Heat oven to 425°F. Line cookie sheet with foil. Place pork tenderloin on foil-lined cookie sheet, tucking small end under to prevent overcooking. Sprinkle all sides with salt and pepper.
Bake at 425°F. for 20 to 30 minutes or until no longer pink in center and juices run clear. Remove from oven; cover with foil. Let stand 10 minutes.
Meanwhile, spread 1/2 teaspoon cream cheese on each slice of bread. Cut pork into 24 thin slices; place 1 slice on each slice of bread. Toss apple slices with apple juice to prevent browning. Arrange apple slices over pork. Sprinkle with fresh chives. Serve immediately, or cover and refrigerate until serving time.
