Pork Roast and Vegetables with Brown Gravy

Nestled into slits in the top of the roast, onion slices release their flavor directly into the meat. If you wish, add a sliver of garlic to each slit, too. The aroma as this oven meal roasts is mouthwatering.

Very easy to make. All seasonings are in the average kitchen, thus nothing special to buy.Great comfort food! I used small to med red potatoes and cut them in half before placing in pan w/roast. Also added large chunks of onions to cook w/potatoes. I was out of carrots the day I made this. Will add next time. My pork roast was nearly a lb larger than recipe, so it took a while longer to roast. Hubby loved this meal! Makes great leftovers and lunches for work. I will make again!
