Ingredients

tablespoon olive oil

large onion, chopped (1 cup)

lb boneless pork loin, trimmed of fat, cut into 3/4-inch cubes

teaspoons chili powder

cup Progresso™ chicken broth (from 32-oz carton)

medium sweet potatoes, peeled, cut into 3/4-inch cubes (about 3 cups)
1
can (15.5 oz) great northern beans, drained, rinsed
1
can (14.5 oz) diced tomatoes, undrained
1
teaspoon grated orange peel
1
teaspoon salt
1/2
teaspoon pepper

Directions

  1. 1 In 4-quart saucepan, heat oil over medium-high heat. Cook onion in oil about 2 minutes, stirring frequently, until tender.
  2. 2 Add pork and chili powder; cook and stir about 4 minutes or until pork is no longer pink.
  3. 3 Stir in remaining ingredients. Reduce heat to medium-low. Cover and simmer 15 to 20 minutes or until sweet potatoes are tender.
