Polish Sausage and Cabbage Foil Packs

Ingredients

  • 1 lb. smoked Polish sausage, cut into 1-inch pieces
  • 1 small head cabbage, cut into 8 wedges
  • 8 small red potatoes, unpeeled, cut into quarters
  • 1 cup chili sauce
  • 1/2 teaspoon caraway seed
  • 1/8 teaspoon pepper

    Heat grill. Cut four 18x12-inch pieces of heavy-duty foil. Divide sausage, cabbage and potatoes evenly onto foil.

    In small bowl, combine chili sauce, caraway seed and pepper; mix well. Spoon evenly over sausage and vegetables. Wrap each packet securely with double-fold seals, allowing room for heat expansion.

    When ready to grill, place packets on gas grill over medium-high heat or on charcoal grill 4 to 6 inches from medium-high coals. Cook 30 to 40 minutes or until cabbage and potatoes are tender. Open packets carefully to allow hot steam to escape.

  • Caraway seed comes from an herb in the parsley family. Its strong anise-like flavor is common in German, Austrian and Hungarian cuisines.
  • Any type of fully cooked sausage can be used in this recipe.
  • Cabbage provides an excellent source of vitamin C.
