Heat oven to 375ºF. Grease cookie sheet with shortening.
In large bowl, beat brown sugar, butter and egg with electric mixer on medium speed until light and fluffy. On low speed, beat in flour, nutmeg, salt and baking soda. Stir in apple. Onto cookie sheet, drop dough by rounded teaspoonfuls about 2 inches apart.
Bake 8 to 10 minutes or until light brown. Remove from cookie sheet to cooling rack. Store cooled cookies loosely covered.
