Planked Salmon with Peach-Mango Salsa

Served this 30-minute salmon dish hot off the grill with home-made peach-mango salsa, for a delicious meal.

Ingredients

Salsa

cup lime juice

tablespoon honey

medium mango, seed removed, peeled and chopped

cups chopped peeled peaches

cup chopped fresh cilantro

tablespoon finely chopped bell pepper

Salmon

untreated cedar plank, 16x6x2 inches

large salmon fillet (about 2 lb)

cup packed brown sugar
  • 1 In medium glass or plastic bowl, mix lime juice, honey and salt; toss with remaining salsa ingredients. Cover; refrigerate at least 1 hour. Meanwhile, soak cedar plank in water at least 1 hour.
  • 2 Heat gas or charcoal grill. Place salmon, skin side down, on cedar plank. Make diagonal cuts in salmon every 2 inches, without cutting through the skin. Rub salmon with brown sugar.
  • 3 Place cedar plank with salmon on grill over medium heat. When cedar plank begins to smoke, cover grill; cook 30 to 35 minutes or until salmon flakes easily with fork. Remove salmon from plank, using large spatula. Serve with salsa.
