When deep dish pizza was first offered in restaurants, many had a thick whole-wheat crust. The restaurant provided sueeze bottles of honey to drizzle over the plain, thick outer crust. The combination was delicious. To achieve some of that flavor, we brush honey over the crust of this calzone. The savory-sweet combination is very appealing.
Fennel seeds are oval and greenish-brown. They are used in sweet and savory recipes, and to flavor liqueurs. Added to the meat mixture to this calzone, fennel seed evoke the flavor of Italian sausage.
