lb lean (at least 80%) ground beef

medium onion, chopped (1/2 cup)

small green bell pepper, chopped (1/2 cup)

jar (14 oz) pepperoni-flavored or regular pizza sauce
1/2
cup sliced ripe olives, if desired

sandwich buns, split
1
cup shredded pizza cheese blend (4 oz)

  • 1 In 10-inch skillet, cook beef, onion and bell pepper over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • 2 Stir in pizza sauce and olives. Heat to boiling, stirring occasionally.
  • 3 Spoon about 1/2 cup beef mixture on bottom half of each bun. Immediately sprinkle each with 2 tablespoons of the cheese; add tops of bun. Serve immediately or let stand about 2 minutes until cheese is melted.

Very easy to make and really good. I leave out the black olives as my family does not like them. I have even made an extra batch, spooned it into a muffin tin, froze it, popped out each one and put into a freezer bag. When you need a quick sandwich, pop one out and warm up in the microwave.
