I was afraid this would be TOO sweet, and so I used half the amount of chips. Still for me, way too sweet. Will use whipping cream next time sweetened with powdered sugar, if I even make it another time.

It was a little difficult to make but the results were AWESOME! I have made this cheesecake 4 or 5 times now and it is the hit of every dinner party. It does become easier also the more you make it. But I highly recommend it to anyone that enjoys making cheesecakes.

We made this for a Christmas party and it was very popular. I used a traditional Graham cracker crust, only I added 2 Tbsp ground pistachios to it. I also thought the pistachios would get too browned if I baked them on top as directed. So I topped the cake with them after baking and drizzled melted white chocolate over the top.

I was looking for a regular cheesecake recipe when I found this Pistachio cheesecake recipe.I and my dad are the only one I know who eat Pistachios so I modified the recipe. Instead of 3.4oz of pistachios instant pudding I used 3.4 oz White Chocolate instant pudding.I also used 1cup of vanilla chips and 1 cup of white Chocolate chips.I also omitted the 1/2cup of chopped pistachios. I used a mix of melted white Chocolate and crumbeled chocolate cookie crumbs. On half of the top I mixed in a small amount of coffee to the mix of melted white chocolate and chocolate cookie crumbs. This alteration took an exalant easy recipe an made a 2nd easy exalant recipe! Have fun and enjoy! Remember letting the (grand)kids help teaches them alsorts of fun stuff and it is time togather!!
