Pineapple-Caramel Sauce

Pineapple caramel sauce brings back flavor memories of the topping for pineapple upside-down cake. Serve it over plain cake or sliced bananas.

(20-oz.) can pineapple chunks in unsweetened juice, drained, reserving 3/4 cup liquid

tablespoons cornstarch
1/4
cup butter
1/2
cup firmly packed brown sugar
1/4
cup maraschino cherry halves, well drained

  • 1 In small bowl, combine 3/4 cup reserved pineapple liquid and cornstarch; blend well. Melt butter in medium saucepan. Add cornstarch mixture and brown sugar; blend well. Bring to a boil over medium-high heat, stirring constantly. Boil 1 minute.
  • 2 Stir in pineapple and cherries. Cook until thoroughly heated. Serve warm.
