These are now my favorite enchiladas! They were excellent. The sweet, sour and spicy mix is just excellent. I was thinking of adding some more beans next time. The husband thought there was a bit too much pineapple but he''s not really a pineapple fan. He''s not the one making them so the pineapple stays!! Great recipe!!!

My family loved this one! My husband will not have a meal without meat usually, but with this dish, he didn''t even miss it. I made another batch today just to keep around the house for after school, etc. It is great re-heated too...I think it tastes even better the next day.

This recipe was AWESOME, I am so used to having meat with all my meals I was kinda scared to try this but it looked delicious so I thought I would give it a try.My whole family loved this, The pineapple really MADE this meal complete. I will definetely try this one again.

I think corn tortillas might preserve the integrity of the enchilada; the pineapple, if not pressed to remove most of the juice, tends to cause the dish to become very watery if not eaten right away. Perhaps reducing the pineapple by 1/2 might be a better idea.

My whole family loved this recipe, including my twin 2-year olds. The combination of sweet and savory flavors was perfect and it was easy to make.

Loved the flavor of this recipe, only the kids didn''t like the cilantro flavor so much. Neighbors love that I have shared this recipe with them. Great!

This was really tastie! I "diva''d" it a lil since there were no spices listed in the recipe. I added cumin and cayenne and left out the bell pepper (I don''t like the flavor of cooked bell pepper) and it was AMAZING! I made it again a week later and added grilled zuccini to the mix. I loved the addition but my friend liked it better without! No matter what, this is a great "basic" recipe... something that you can add to and modify based on what you have on hand or what your family likes - always good to have those in your repetoire!

The enchiladas are delicious! The ingredients are simple and preparation is quick and easy. I will make them often.
