I made this a few weeks ago. My 7 year old loved it as did my husband and I. It was really good!

I was excited to try these, given they won the bake-off! Very disappointed. The pineapple and enchilada sauce were horrible together. I threw away over half the pan. Very wasteful. I threw the recipe away as well.

This was so good and my family never missed the meat. I have also servrd this to guests with all great responses.

Pros: Delicious. Great flavor. Cons: Mushy and unappealing consistency. Suggestion: I will try using pineapple chunks next time rather than tidbits and hope this helps the texture.

I made this recipe after watching Mary prepare it on the televised bake off. We thought it was delicious and a wonderful change to a traditional dish. I would also add another can of red enchilada sauce.

These were great. The black bean and pineapple combo was a refreshing new flavor adventure. Make sure and drain and dry the pineapple well to prevent it getting soggy. Also have an extra can of the red enchilada sauce to pour over the entire dish before baking.

This a in excellent healthy dish. My kids initially turned their noses up at it (they are very picky, but once they ate it they really liked it.

My boyfriend and i made these enchiladas exactly to the recipe and they were only o.k. i consider ourselves very open minded to new recipes and enjoy trying new foods. we will definately replace the pineapple with grilled chicken next time. the pineapple just made this dish too sweet. enchiladas will be a regular dish in our house now just with a couple of different ingredients.

This was pretty good. Although since I am single, it made way too much. Also, it wasn''t spicy enough for me. Next time I think I''ll use the "hot" enchilada sauce. But the flavors were good; I didn''t miss "meat" at all.

I made this recipe and it was great. The only thing I added was some shrimp cooked in a touch of butter with some cayenne pepper. It spiced up the dish a bit. I made this for a weekly group get together and several people asked for the recipe it was so good.
