This is one of my favorite recipes! I'm a vegetarian, so it was nice to see something different for mexican night! Even my carcass-loving boyfriend said that it was so flavorful and different that he didn't miss the meat! I have changed up the recipe a few times, using different heat levels, my own ench. sauce, a mix of black and pinto beans, even threw in some peach salsa, and each time it was wonderful!

Not my favorite. My husband didn't like the pineapple with the pepper and onion. Was OK...but not worth the effort. Have had better enchiladas.

This recipe is delicious! However next time I make it I will change a few things. I am going to add more beans and a little less pineapple. I will also use a spicier red enchilada sauce instead of the mild (it was a little too sweet) and I will try it out with corn tortillas. Overall wonderful recipe - Thanks!

I thought these were great. I followed the recipe exactly, except didn't follow brands recommended and used a spicier sauce. The pineapple worked really well and gave the enchiladas a little something special. Will make again really soon!

Freakin' Delicious.%0d%0a%0d%0aI used chuck pineapple, and chopped it up for smaller chucks and squeezed most of the juice out so everything didn't get soggy. I also added some chipotle tabasco for kick! YUMMY~%0d%0a%0d%0aAnd the leftover pineapple juice made lovely cocktails as I cooked!%0d%0a

My mom told me about this recipe and I really like it. As a single person I can eat this for lunch/dinner for several days and not get sick of it. I would recommend reheating in the oven or a toaster oven which is probably why some reviewers thought it was 'mushy'. %0d%0a%0d%0aI was honestly surprised to see this recipe reate below a 4 - I am guessing they did not make it propertly. I think to make it a little more 'crispy' and less soggy, you might want to leave the foil off the entirety of the cooking process. It is a huge winner for me and anytime I've made it for my friends or boyfriends, they sing praises and ask for the recipe.
