This was a big hit with my family! I couldn't find the mexican canned corn so I added some red pepper and some jalepeno. I used flour tortillas instead of corn. Delicious!

I had to take out the peppers and onions just because I didn't have any, but even without those them, this meal was great. My husband questioned when I told him about the pineapple, but he definitely ate his words...and then some! I will be making it again, perhaps this time with all the ingredients.

I made this recipe for the first time when my daughter decided (at the age of 8) that she wanted to be a vegetarian. So we set out to try some vegetarian dishes, and stumbled on this one. I absolutely loved it, and so did my daughter. At the end of her vegetarian experiment she decided, in all her eight year old wisdom, that she would be a vegetarian that only ate chicken and beef. But we got this recipe out of the adventure, so I am happy.

I really liked this! I added in some drained, canned corn, and it was delicious! I will definitely make this again. The pineapple gave this enchilada a unique taste that was enjoyable.
