Pine Nut Caramel Crisps

(2 1/2-inch square) regular or chocolate graham crackers

cup firmly packed brown sugar
3/4
cup margarine or butter

cup pine nuts or coarsely chopped peanuts

teaspoon vanilla

cup milk chocolate or butterscotch chips

Directions

  1. 1 Lay crackers side by side in single layer in ungreased 15x10x1-inch baking pan.
  2. 2 In medium saucepan, combine brown sugar, margarine and pine nuts. Bring to a boil, stirring frequently. Boil 3 minutes.
  3. 3 Remove from heat; stir in vanilla. Pour mixture over crackers; spread to coat. Sprinkle with chips. Let stand 2 minutes; spread evenly. Cool 30 minutes or until completely cooled. Break or cut into pieces.
