Pine Nut Caramel Crisps

(2 1/2-inch square) regular or chocolate graham crackers

cup firmly packed brown sugar

cup margarine or butter

cup pine nuts or coarsely chopped peanuts

teaspoon vanilla

cup milk chocolate or butterscotch chips
  • 1 Lay crackers side by side in single layer in ungreased 15x10x1-inch baking pan.
  • 2 In medium saucepan, combine brown sugar, margarine and pine nuts. Bring to a boil, stirring frequently. Boil 3 minutes.
  • 3 Remove from heat; stir in vanilla. Pour mixture over crackers; spread to coat. Sprinkle with chips. Let stand 2 minutes; spread evenly. Cool 30 minutes or until completely cooled. Break or cut into pieces.
