This is a very tasty meal, but quite time consuming. I agree that the avocado would have been better not to warm and just use as a garnish on the top. Next time I will pay more attention to the prep time as this took a lot longer than I anticipated. Thankfully my husband came home just in time to help me butterfly the pork and offer an extra set of hands.

Although a bit time consuming to prepare, it was worth every minute! Everything about this dish was great! The only thing I did differently was not putting the avocodo in with the sauce to cook. Just something about warm avocados didn''t sound appealing to me. I sliced them up and put them on top as a garnish. Yummy! I served this dish with some mexican corn cake and a side salad. Everyone including our guests loved it! I might even try this in the future using boneless chicken breasts.
