This nonalcoholic slush omits the rum usually included in the pineapple-coconut drink. If you wish, reserve a few cubes of pineapple to garnish each glass.
Piña coladas are made with coconut cream, pineapple juice and rum. This refreshing non-alcoholic version features fresh pineapple and the sparkling fizz of lemon-lime soda.
Look for cream of coconut in the beverage section of the supermarket.
Ginger ale can be substituted for the lemon-lime soda.
To prepare fresh pineapple first cut off about 1/2 inch from top and bottom of fruit. Set fruit on its flat base on cutting board and use a serrated knife to slice the peel away. Use the tip of a paring knife to remove dark eyes from fruit. Quarter pineapple and cut away center core from each wedge. Cut pineapple wedges into small pieces.
