This tropical island cocktail inspired frozen dessert combines pineapple juice and coconut water with a touch of rum - the result is as refreshing as it is light and easy.

cans (6 oz each) pineapple juice

Steps

  • 1 In medium bowl, stir all ingredients until combined. Pour into 8-inch square (2-quart) glass baking dish.
  • 2 Cover; freeze 3 hours, stirring with fork every 30 minutes, until firm. Before serving, stir with fork until fluffy. Granita can be frozen in a freezer container up to 1 month.
