This is absolutely delicious!!! It's flavorful, satisfying, and healthy. I've made it many times now. I use walnuts or plain sunflower seeds instead of the expensive pinenuts. I love the added little crunches. An 1/8th size serving doesn't seem like much at first glance, but it really does fill you up and I don't get hungry later. I take leftovers to work for lunch and everyone is envious!! I'm going to have to make a couple when it's my turn to bring breakfast. I can't wait!!!

This is a hardy quiche with a ton of flavor and super healthy too! It always overflows while it bakes (and I use a deep dish plate) so make sure you have a pan underneath!

This is not your mama's quiche. This hardy, healthy quiche was a crowd pleaser to the men in my family. It easily makes 8 servings (or more). Great for breakfast too.

Considering the fact that pine nuts can be a little expensive, I think you could substitute those with toasted almond slivers.

I think this is a great recipe, however in order to save a bit of energy I have a suggestion. I felt like the oven was waiting too long while the quinoa was cooking (12-15 min.)even though there needed to be some time for the oven to cool down to 350. It doesn't take all that long, So that it enough time to bake another pie shell if you were interested in making a cream pie at a later time. I like to try to conserve as much energy as possible. The other alternative is to cook the quinoa first before doing the 5 min. of partly baking the crust.
