My husband loves eggplant and I've never cooked with it before so I wanted to try something simplistic for my first attempt. He LOVED it! I substituted the provolone cheese for swiss because that is my husband's favorite cheese and I knew he'd like it better. I did cut the eggplant a little thicker though than the recipe calls for and glad I did because eggplant cooks VERY fast in the skillet. My presentation was even like the picture! Easy, quick, and delicious!!
