These were very good. I used a little less cheese, added a dash of cumin & chile powder & topped them with cilantro when they came out of the oven.

YUM - I've never had mole so I don't know how this compares but our house of adults and teens really liked this. It's quick and easy too. We'll definitely make it again. I made some substitutions - splenda for the sugar, 8" whole wheat tortillas, reduced fat cheese & sour cream. I also put a sliced asparagus spear in the center of each.

I love mole, but the cinnamon in this was way too overpowering compared to any of the mole I have had in a restaurant. It tasted more like a dessert sauce to me. I gave it a higher rating than a one simply because it was a bold choice to enter in a cooking competition like this one. So I gave it an extra star for boldness.

Very unique combination of flavors! Even my kids enjoyed these. I followed the recipe exactly. I might try with a rotisserie chicken next time to make it even easier and maybe a smaller size tortilla. very rich--I could only eat a half of one. Great as leftovers the next day, too. Good luck!

Delicious recipe! I always look for easy to make authentic recipes. My husband and I order mole whenever we see it on a menu. Mole is complicated and time-consuming to make from scratch. This recipe is sooooo easy and is as good as we've had in restaurants. I would recommend this to others!

My husband liked,but myself & kids did not like at all. We usually enjoy spicy foods,but the taste of this sauce did not sit well with us. I would not make again or recommend.

Fabulous flavor and easy to prepare. The combination of peanuts and chocolate with the red sauce is unique and makes this recipe a stand out.

These enchiladas were very good. Very unique sauce and easy to make. The sauce is rich and I thought the garnishes of the sour cream, cilantro and peanuts cut the richness. They were nice touches.

I loved this dish! This is a great addition to our mexican dinner ideas and I had all the ingredients on hand. It's quick and easy to make and the sauce was suprisingly VERY GOOD (don't be fooled by the peanut butter)! I've made it twice, the first time cooking chicken breasts and cutting into strips and the second time I used a cooked rotisserie chicken from the super market (it made the dish preperation even faster). The enchilads heated up very well as left overs too. This is a must try recipe and it's a WINNER with our family!
