These cookies are fabulous! I love to bake and have never come up with a recipe quite this good and easy to make. Now I wonder if there is a coconut macaroon version out there somewhere???

When mixing the peanut butter and powdered sugar, I don't think a full cup of powdered sugar is necessary. Try about half, maybe 3/4... a full cup will leave you with a lot of excess sugar.

I made a double batch of these, and they are wonderful! Every bit as good as all of the reviews led me to believe the cookies would be. As someone suggested, I chilled both the chocolate dough and the peanut butter mixture for a couple of hours before putting the cookies on the cookie sheet, and I pushed the peanut butter mixture down firmly on the chocolate dough, so it wouldn't roll off. My husband, who isn't a big peanut butter fan, even loved these! This recipe is a keeper.
