Even weekday breakfast can be quick without being boring! If desired, instead of cooking bacon, warm slices of Canadian bacon in the microwave--it takes even less time.

Ingredients

  • 8 slices bacon, if desired
  • 8 frozen buttermilk, low-fat or multi-grain waffles
  • 1/2 cup creamy peanut butter
  • 1/4 cup strawberry or any flavor jam or preserves

Steps

    Cook bacon until crisp. Drain on paper towels; set aside.
  • 2
    Toast waffles as directed on package. Spread 4 waffles with peanut butter and half of the jam. Top each waffle with 2 bacon slices, breaking slices to fit waffles.
  • 3
    Top with remaining waffles; press slightly. Place on individual serving plates; drizzle with remaining jam. Serve with knife and fork.
