Peach-Plum Cobbler

Ingredients

1/2 lb peaches, peeled, sliced
1
1/2 lb plums, sliced
3/4 cup granulated sugar
4
1/2 teaspoons cornstarch
1
1/2 teaspoons fresh lemon juice
1/2 teaspoon almond extract

1/4 cups baking mix
1/2 cup milk
1/4 cup butter or margarine, melted
2
tablespoons cinnamon-sugar
1/3 cup sliced almonds, toasted
  • 1 Spray 3 1/2- to 4-quart slow cooker with cooking spray. In large bowl, mix peaches, plums, 1/2 cup of the granulated sugar, the cornstarch, lemon juice and almond extract. Transfer mixture to slow cooker.
  • 2 In medium bowl, stir baking mix, remaining 1/4 cup granulated sugar, the milk and butter just until blended. Drop heaping tablespoons of dough into 8 mounds on fruit in slow cooker.
  • 3 Cover; cook on High heat setting 3 hours 30 minutes or until topping is dry in center and fruit is bubbly.
  • 4 Sprinkle cinnamon-sugar over topping. Cover; cook 30 minutes longer. Let stand 15 minutes before serving. Sprinkle with almonds.
