Ingredients

pkg. ground beef or ground turkey
sofrito ( see below)

green and red peppers

pkg. of sweet small peppers (aji)
1
bundle of recao
some cilantro
1
head of garlic
3 or 4 onions (all items above puree along with onions)

Sweet (yellow) plantains
6-8
whole eggs beaten
Vegetable oil - small amount to fry

Manzanilla (Spanish Olives) no pits

can of string beans
1
rectangle 13 x 9 oven glass baking dish
Cooking Spray
Pillsbury Crescent Rolls
rice and beans or salad (optional)

Directions

  • 1 Preheat oven to 350 degrees.
  • 2 Cook ground meat and sofrito. Set aside.
  • 3 Cut plantains into long thin (not that thin) strips.
  • 4 Fry the plantain strips. Set aside.
  • 5 Beat the eggs. Set aside.
  • 6 Spray rectangle glass baking dish with cooking spray.
  • 7 Mix in the strings beans and olives into ground meat mixture.
  • 8 Start layers with eggs then plantain then meat mixture.
  • 9 End with plantain layer and eggs on top.
  • 10 Cook for an hour or until eggs are cooked(not runny).
  • 11 Let rest. Then serve.
  • 12 Serve with rice and beans or salad.
