Pasta Cheeseburger Soup

Ingredients

  • 1 1/2 cups uncooked rotini pasta (4 oz.)
  • 1/2 lb. lean (at least 80%) ground beef
  • 2 small zucchini, chopped (2 cups)
  • 1/2 teaspoon dried oregano leaves
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 cup chicken broth
  • 1 jar (8-oz.) pasteurized process cheese sauce

    Cook rotini as directed on package. Drain well.

    Meanwhile, in 2 1/2-quart saucepan, cook ground beef, zucchini and oregano over medium-high heat for 5 to 7 minutes or until thoroughly cooked, stirring frequently. Drain.

    Stir in flour and salt. Add milk, chicken broth, cheese sauce and cooked rotini to ground beef mixture; mix gently. Simmer about 5 minutes or until cheese is melted, stirring occasionally.

  • If you don't have rotini on hand, use elbow or shell macaroni. For an adult twist, use a cup of beer instead of the chicken broth.
