Parmesan-herb Muffins

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup grated Parmesan cheese
  • 1 tablespoon sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon dried sage leaves, crumbled
  • 1/2 cup chopped fresh parsley
  • 1 1/4 cups buttermilk
  • 1/4 cup butter or margarine, melted
  • 1 egg, slightly beaten

    Heat oven to 400°F. Grease bottoms only of 12 medium muffin cups or line with paper baking cups. In large bowl, combine flour, cheese, sugar, baking powder, baking soda, sage and parsley; mix well.

    Add buttermilk, butter and egg; stir just until dry ingredients are moistened. Divide batter evenly into greased muffin cups, filling each about 2/3 full.

    Bake at 400°F. for 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.

  • Special Touch Store-bought grated Parmesan cheese will work in this recipe, but freshly grated Parmesan will give these muffins a livelier taste and is worth the extra effort. No fancy tools are needed; a fine-holed grater will do.
