Parmesan-Butternut Squash Gratin

Crispy bread crumbs add a bit of crunch to tender slices of butternut squash seasoned with garlic and Parmesan.

cup butter or margarine

large cloves garlic, finely chopped

cup Progresso® panko crispy bread crumbs
1/3
cup grated Parmesan cheese
1/4
teaspoon salt

teaspoon pepper
1/4
cup chopped fresh parsley

  • 1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Peel, halve lengthwise and seed squash; cut into 1/2-inch-thick slices. Arrange with slices overlapping slightly in baking dish.
  • 2 In 2-quart saucepan, melt butter over medium heat. Reduce heat to low. Add garlic; cook 2 to 3 minutes, stirring frequently, until garlic is soft and butter is infused with garlic flavor. Do not let butter brown.
  • 3 In small bowl, mix bread crumbs, cheese and 1 tablespoon of the butter-garlic mixture. Brush squash slices with remaining butter-garlic mixture. Sprinkle with salt, pepper and bread crumb mixture.
  • 4 Bake uncovered 30 to 40 minutes or until squash is tender when pierced with fork. Increase oven temperature to 425°F; bake 5 to 10 minutes longer or until lightly browned. Before serving, sprinkle parsley over top.

Butternut squash is a tan-colored, elongated vegetable with a bulbous end and mildly sweet flavor. When selecting butternut squash, look for those that have hard, tough rinds and are heavy for their size.

I made this for the first time on Thanksgiving and we loved it. It was sort of a risky move on my part because we were having guests and I wasn't sure if anyone other than my husband and myseff even liked butternut squash. One guest stated it was almost good enough to be a dessert. I have made it again since !

I made this last Saturday and it was a HIT. Everyone loved it and it was very easy to make. Freshly grated parmesan cheese with those panko crumbs were the best. Several people asked for the recipe. Will make again and again and again...

I made this for turkey day this year and exactly as the recipe calls for and it was spectacular! Everyone absolutely LOVED this! I even brought some into work to share with my co-workers and they loved it also. Thanks and I will be keeping this one for years to come!! Deeeeeeeelish!!
