I made this for the first time on Thanksgiving and we loved it. It was sort of a risky move on my part because we were having guests and I wasn't sure if anyone other than my husband and myseff even liked butternut squash. One guest stated it was almost good enough to be a dessert. I have made it again since !

I made this last Saturday and it was a HIT. Everyone loved it and it was very easy to make. Freshly grated parmesan cheese with those panko crumbs were the best. Several people asked for the recipe. Will make again and again and again...

I agree this is an awesome recipe. Nice to get away from the "traditional" butternut squash dish. I did change the way I did it accidentally because I had cubed the butternut squash, so I put the squash in a bag, added the garlic butter and shook it up, then added the breadcrumb and cheese mixture to bag and shook it up. I did add a little more crumbs and cheese over top. It was excellent.

I love this recipe. I even made it when it was 90 degrees out just because I was craving it so bad. YUM YUM YUM!
