Ingredients

large papaya or 1 small cantaloupe

tablespoon lime juice

cups cubed cooked chicken

oz. (1 1/2 cups) fresh pea pods, cut into thirds

cup chopped green onions

cup reduced-calorie or regular mayonnaise

tablespoons lime juice
1/2
teaspoon salt
1/4
teaspoon pepper

leaves leaf lettuce
4
teaspoons sesame seed, toasted*

Directions

  1. 1 Quarter, seed and peel papaya; sprinkle with 1 tablespoon lime juice. In medium bowl, combine chicken, pea pods and green onions.
  2. 2 In small bowl, combine mayonnaise, 2 tablespoons lime juice, salt and pepper; blend well. Spoon mayonnaise mixture over chicken mixture; toss gently.
  3. 3 Arrange lettuce on 4 individual plates; top with papaya. Spoon 1/4 of chicken mixture over each papaya quarter; sprinkle each with sesame seed.
