cups cubed cooked chicken

oz. (1 1/2 cups) fresh pea pods, cut into thirds

  • 1 Quarter, seed and peel papaya; sprinkle with 1 tablespoon lime juice. In medium bowl, combine chicken, pea pods and green onions.
  • 2 In small bowl, combine mayonnaise, 2 tablespoons lime juice, salt and pepper; blend well. Spoon mayonnaise mixture over chicken mixture; toss gently.
  • 3 Arrange lettuce on 4 individual plates; top with papaya. Spoon 1/4 of chicken mixture over each papaya quarter; sprinkle each with sesame seed.

* To toast sesame seed, place seed in skillet. Stir over medium heat for 1 to 2 minutes or until light golden brown.

A papaya tree grows from seed to the height of 20 feet within 18 months. To prepare the fruit, cut it in half and scoop out the center mass of pulp and brown-black seeds. Cut the fruit into slices, then run a knife between the flesh and the skin to peel.

Lime has a special affinity for papaya and cantaloupe. Garnish the salad with shredded or grated lime zest or with slices or wedges of lime.
