Ingredients

cup frozen pineapple-orange juice concentrate, thawed

ripe banana, mashed

(20-oz.) can crushed pineapple in unsweetened juice, undrained

cups cut-up assorted fresh or canned fruit (such as strawberries, mango, mandarin orange segments, kiwi fruit, melon balls and/or grapes)
1
pint (2 cups) raspberry or orange sherbet
1
(20-oz.) bottle lemon-lime flavored carbonated beverage, chilled
Fresh mint leaves

Directions

  1. 1 In nonmetal storage container, combine juice concentrate, banana and pineapple; mix well. Cover; freeze at least 6 hours or overnight.
  2. 2 In another nonmetal storage container, combine assorted fruit. Cover; refrigerate.
  3. 3 About 2 hours before serving, place frozen pineapple mixture in refrigerator to soften slightly.
  4. 4 Just before serving, spoon about 1/4 cup assorted fruit into each individual dessert dish. Add 1/4 cup frozen pineapple mixture. Top each with small scoop (about 2 tablespoons) sherbet. Add about 3 tablespoons carbonated beverage to each. Garnish with mint leaves.
