This was fantastic! Everyone at the party I had asked me for the recipe. I swapped ham for bacon, parsley for cilantro, and monterey-jack for pepper-jack because it just happened to be what I had. Also I sauteed fresh mushrooms with half of a white onion and the red pepper rather than using the canned mushrooms. Will definitely be making this again.

We made this for Easter weekend. It was easy & delicious! One that will definitely be made again!

It's a good solid recipe. There's nothing special or exotic about it, but it won't disappoint.

My Mom made this for Christmas morning for years and everyone loved it. I make it for work occasions and it is always a success. Easy to make and very good.

We take this to almost every Breakfast Sunday at out church (which is the first Sunday of the month) and it is always gone. People ask " did you bring the egg thing? we add a small can of mushrooms and use 1/2 eggs 1/2 egg beaters too to help make it alittle more healthy. And add a tomatoe wedges to the top (one for each square) and it is a real winner. So nice you can make it ahead of time then throw it in the oven in the morning. Great for brunches on holidays.

An excellent dish for a brunch. I like that you prepare it the night before and then just have to pop it into the oven the next day.

This did not disappoint! I had all of the ingredients on hand (swapped red peppers for green) and it was a breeze to throw together. I took it to a brunch at church and was asked by 3 people for the recipe. Obviously, I sent them straight to this website.
