Heat oven to 375°F. In plastic bag, combine potato flakes, salt, pepper and poultry seasoning; shake to mix. In shallow bowl, combine egg and lemon juice. Dip chicken in egg mixture. Add to flour mixture in bag; shake to coat. Place chicken in ungreased 15x10x1-inch baking pan.
Bake at 375°F. for 45 to 60 minutes, or until chicken is fork-tender and juices run clear.
