Orange-Coconut Breakfast Rolls

teaspoon Crisco® Pure Canola Oil

to 1 cup flaked coconut

can (12.4 oz) Pillsbury® refrigerated cinnamon rolls with icing (8 rolls)

tablespoons Smucker’s® Sweet Orange Marmalade
1/4
cup Fisher® Chef’s Naturals® Natural Sliced Almonds
1/2
to 1 teaspoon McCormick® Pure Almond Extract

Directions

  • 1 Heat oven to 400°F (375°F for dark pan). Grease 9-inch round cake pan with canola oil or spray with Crisco® Original No-Stick Cooking Spray.
  • 2 Place coconut in shallow dish. Separate dough into 8 rolls; set icing aside. Roll each cinnamon roll in coconut; press coconut onto all sides of roll to coat generously. Place rolls, cinnamon topping sides up, in pan.
  • 3 Make well in each roll, using back of spoon. Fill each well with 1 tablespoon marmalade; sprinkle with almonds.
  • 4 Bake 15 to 20 minutes or until golden brown. Cool 10 minutes. Meanwhile, in small bowl, stir almond extract into icing. Carefully spread icing on warm rolls. Serve warm.

Made these for Christmas brunch last year. They were delicious and easy to make. They were very sweet- so i think they would be just as good without the glaze too. This is a nice way to jazz up cinnamon buns and i just love the almond flavor to make it different!

This was a really good breakfast roll. My DH thought it was too sweet, I thought it was sweet too but it was supposed to be! I made half the rolls with this recipe and the other half just plain and he would probably prefer the plain ones. I, however, really liked these. I think they would be good with tart cherry preserves because almond extract goes so well with cherry and that might cut down a little on the sweetness. Or maybe try to find unsweetened coconut (which this recipe may call for!).

These remind me of a really delicious pancake I had once that had coconut banana and nuts with an orange slice on the side. Not wanting to overpower the toppings with maple syrup I squeezed the orange on top. This is a great way to make a batch of that flavor all at once. This with a banana and milk is a delicious & filling breakfast.

I used orange rolls instead and unrolled each roll adding 5 cranberries to each. I also sprayed each roll with Crisco to make the coconut stick better. I added some cream cheese frosting to the orange frosting as well. I made them for a friend for Christmas and I am packing up the icing for her to add to them as she warms them.
