medium oranges, peeled, divided into segments, membrane removed and cut into thirds

cup chopped smoked almonds
  • 1 In small bowl, mix orange juice, honey and mustard with fork.
  • 2 On each of 4 salad plates, arrange 3 lettuce leaves. Fill lettuce leaves with orange pieces and almonds. Drizzle with orange juice mixture.
