Open-Faced Veggie Burger Melts

Ingredients

frozen soy-protein burgers (from 9-oz box)

medium fresh broccoli spears (about 2 1/2 oz)

slices whole-grain bread, toasted
2
teaspoons sweet honey mustard
2
slices tomato
2
slices Swiss cheese (3/4 oz each), cut into 6 strips

Directions

  1. 1 Cook frozen protein burgers as directed on box.
  2. 2 Meanwhile, in small microwavable bowl, combine broccoli and 1/4 cup water; cover with microwavable plastic wrap. Microwave on High 2 to 3 minutes or until broccoli is crisp-tender. Drain.
  3. 3 Place toasted bread slices on ungreased cookie sheet; spread each with mustard. Place protein burgers on bread; top with tomato slices and broccoli. Arrange cheese slices on top of broccoli.
  4. 4 Broil 3 to 4 inches from heat 1 to 2 minutes or until cheese is melted.
