Love this recipe! Being single & when I made it for the 1st time, I wondered what I was going to do with the leftover potatoes in the bag. So I combined the 1st four ingredients a quart size baggie & then froze them. It's so simple to pull a bag out of the freezer & throw it in the crockpot with a can of soup & leave it on low all day while at work. After work, I toss in dollop of sour cream & have a delicious dinner.

This was an easy tasty comfort food. I also used low fat sour cream and fat free cream soups. I doubled the recipe and used one can of 98% fat free cream of potato and one can of 98% fat free cream of mushroom soup. Couldn't find the potatoes O'Brian, so I chopped my own onions and green peppers. Very easy to make over my lunch hour so I didn't have to spend time in the kitchen after work. Totally yummy!

I made this tonight, yummy comfort food!
I used low fat sour cream and 2% cheese, and left out the onions to save calories. I cannot have peppers or green beans because I have gastroparesis, so I used frozen plain hash brown potatoes, and fresh shredded carrots in place of the green beans.

This was simple to put together and enjoyable. However I would prefer it for a side dish and not a main course. Would be great for a "dish to pass"..

Tasted like wonderful comfort food! I also have made it using reduced fat or fat free cheddar cheese and sour cream to cut back on some of the fat and calories, I also add in extra green beans. Has become a staple in our house.

So easy to make and soooooooo delicious. I would make it again in a heartbeat and even use is without the ham as a potato side dish.
