Ingredients

  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 1 cup margarine or butter, softened
  • 2 eggs
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups quick-cooking rolled oats
  • 1 cup coconut
  • 1/2 to 1 cup chopped nuts

Steps

    In large bowl, combine sugar, brown sugar, margarine and eggs; beat well. Add flour, baking powder, baking soda and salt; mix well. Stir in oats, coconut and nuts. Divide dough in half. Shape each half into roll 2 inches in diameter; wrap in plastic wrap. Refrigerate 2 hours or until firm.

    Heat oven to 375°F. Cut dough into 1/4-inch slices. Place slices 2 inches apart on ungreased cookie sheets.

    Bake at 375°F. for 8 to 11 minutes or until golden brown. Immediately remove from cookie sheets.
