cup firmly packed brown sugar

cup margarine or butter, softened

  • 1 In large bowl, combine sugar, brown sugar, margarine and eggs; beat well. Add flour, baking powder, baking soda and salt; mix well. Stir in oats, coconut and nuts. Divide dough in half. Shape each half into roll 2 inches in diameter; wrap in plastic wrap. Refrigerate 2 hours or until firm.
  • 2 Heat oven to 375°F. Cut dough into 1/4-inch slices. Place slices 2 inches apart on ungreased cookie sheets.
  • 3 Bake at 375°F. for 8 to 11 minutes or until golden brown. Immediately remove from cookie sheets.
