Nutty Gorgonzola-Roasted Potato Slices

Baked potatoes topped with cheese, walnuts and chives gives you delicious appetizers ready in 25 minutes. Perfect if you love Italian cuisine.

small red potatoes (about 2 inches in diameter)

cup crumbled Gorgonzola cheese, room temperature (4 oz)

cup chopped walnuts

tablespoons chopped fresh chives
  • 1 Heat oven to 400°F. Slice off each end of each potato; discard. Cut potatoes into 3/8-inch slices (about 3 per potato).
  • 2 In medium bowl, combine potato slices and oil; toss to coat. Arrange slices on ungreased cookie sheet. Sprinkle with salt and pepper. Bake at 400°F. for 20 minutes or until tender.
  • 3 Meanwhile, in small bowl, combine cheese, walnuts and chives; mix well. Top each roasted potato slice with scant 1 tablespoon cheese mixture.
