Ingredients

  • 3/4 cup sugar
  • 1/2 cup butter or margarine, softened
  • 1 cup buttermilk
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 cup chopped nuts
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

    Heat oven to 350°F. Grease bottom only of 9x5- or 8x4-inch loaf pan with shortening or cooking spray. In large bowl, beat sugar and butter with spoon until light and fluffy. Stir in buttermilk and eggs until well blended.

    In small bowl, mix flour, nuts, baking powder, baking soda and salt. Add to buttermilk mixture; stir just until dry ingredients are moistened. Pour into pan.

    Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; remove from pan. Cool completely, about 1 hour. Wrap tightly and store in refrigerator.

  • To substitute for buttermilk, use 1 tablespoon vinegar or lemon juice plus milk to make 1 cup.
  • Date Bread: Substitute packed brown sugar for sugar; decrease nuts to 1/2 cup. Stir in 1 cup chopped dates and 1 teaspoon grated orange peel after flour addition. Pocket of Streusel Bread: For filling, mix 1/2 cup packed brown sugar, 1/2 cup chopped walnuts, 1 teaspoon ground cinnamon and 1 tablespoon butter or margarine, melted. For batter, substitute packed brown sugar for sugar; decrease nuts to 1/2 cup. Spread half of batter in greased and floured 9x5-inch loaf pan. Spoon filling down center of batter; spread to within 1/2 inch of sides. Carefully spoon remaining batter over filling, spreading gently to cover. Bake 50 to 55 minutes.
