North meets south Blueberry Peach Pie

I was inspired by a blueberry and nectarine tart I saw in a national magazine. We are not tart people though so I knew I needed to make a pie. This pie is totally delicious and looks great to.

Ingredients

pint of fresh blueberries washed and drained
1
pint of cut up fresh peaches. Quartered, peeled and cut into cubes.
2
tablespoons of lemon juice
1 1/2
cups of sugar ( I always use Turbinado sugar for baking but use what you have)
3/4
cup of Bisquick
A sprinkle of 5 spice
5
pats of butter
Pillsbury Pie Crust

  • 1 Preheat your oven to 400 degrees F.
  • 2 Take your Pillsbury Pie Crust from the frig. Cut open and unroll them on your clean counter. Let them warm up while you combine the ingredients for the pie.
  • 3 Wash and drain the blueberries. Put them in a large mixing bowl.
  • 4 Cut up the peaches. Put them in the mixing bowl with the blueberries.
  • 5 Add the lemon juice to the fruit.
  • 6 Add the sugar and the Bisquick to the mixing bowl.
  • 7 Mix the stuff all together with your clean hands.
  • 8 Wash your hands.
  • 9 Put the bottom crust in your pie pan.
  • 10 Pour in your pie filling into the bottom crust.
  • 11 Sprinkle on the five spice...a little goes a long way.
  • 12 Arrange the five pats of butter on top of the pie filling.
  • 13 Put on your top crust. Cut five slits in the top crust. Four in a square and one in the middle.
  • 14 Bake for 30 minutes at 400 degrees F. Turn down the oven to 350 degrees F and bake 30 more minutes.
  • 15 Check the pie in the last ten minutes. If it is bubbling out the center it is done.
  • 16 Let cool and enjoy! Your family will love you...

You can make your top crust a lattice if you prefer. I like the look but my family prefers the top crust whole.
