Ingredients

French Toast

  • 12 (1-inch) slices French bread
  • 4 eggs
  • 1 cup half-and-half
  • 1 tablespoon sugar
  • 1/8 teaspoon nutmeg

Topping

  • 2 tablespoons butter
  • 2 pears, thinly sliced
  • 1 tablespoon water
  • 1 teaspoon cornstarch
  • 1/3 cup honey

    Spray 12x8-inch (2-quart) glass baking dish with nonstick cooking spray. Arrange slices of bread in sprayed baking dish, completely covering bottom of dish.

    In medium bowl, combine eggs, half-and-half, sugar and nutmeg; beat well. Pour over bread in baking dish. Cover tightly; refrigerate at least 8 hours or overnight.

    When ready to bake, heat oven to 375°F. Uncover; bake 20 to 25 minutes or until golden brown and slightly puffed.

    Meanwhile, melt butter in medium skillet over medium-high heat. Add pears; cook 2 minutes or until pears are tender, stirring occasionally. In small bowl, combine water and cornstarch; blend well. Add honey and cornstarch mixture to pears in skillet; cook 2 minutes or until bubbly. Serve over French toast.

  • In New Orleans, French toast is prepared with French bread. The recipe is called pain perdu, or "lost bread" in French.
  • Nutmeg is the kernel of a fruit that resembles an apricot. The fruit grows on a tropical evergreen tree. The kernel is covered with a lacy coating, which is removed and ground into mace.
  • Covering the surface of the baking dish with bread is critical to the success of this recipe. Since loaves of French bread vary in size and diameter, you may need one or two slices more or less than called for to cover the dish.
