I did not like these at all. Expensive to make and just not very good. They should tell you not to bake the cookie, keep really soft, because if it gets hard at all it not good. The topping was ok, but definitely not worth all the ingredients, not much different then just plain old cool whip.

Well, I was trying to figure out how to write a review and it won't let me modify the stars which I clicked on by mistake. Although I wouldn't give it too much higher. I would give it 3 stars but accidentally clicked on 2 and the system won't let me modify it. Sigh. It just didn't wow me. My husband liked it but he has much sweeter "tooth" than I do.

This was delicious! I made my own lemon curd from the Pillsbury recipe "So easy lemon bars" though.
